Spinach in Spiced Yoghurt Sauce
Recipes similar to this can be found in a number of cuisines including Middle Eastern and Indian but all are surprising similar – this is our take on this dish.
Serves 4
1 good-sized bunch spinach
1 x 300g tub Origin Earth Pot Set Yoghurt
2 tbsp vegetable oil
1 red onion, thinly sliced
3 cloves garlic, finely
pinch dried red chilli flakes
1 tsp ground coriander
1 tsp turmeric
salt
1 Remove spinach leaves from stems and wash well. Steam or microwave spinach until wilted. Press to remove excess water, chop and set aside.
2 Place yoghurt in a bowl and whisk to combine. Set aside.
3 Place oil, onion, garlic and chilli flakes in a frying pan over a medium heat, cover and cook, stirring occasionally, for 8-10 minutes or until onion softens. Add coriander and turmeric and cook, stirring, for 1 minute longer or until fragrant. Add reserved spinach bring to simmering and simmer, stirring, to evaporate any excess liquid.
4 Remove pan from heat and stir in yoghurt. Season to taste with salt.
