Pecorino (pronounced pekoˌriːno) is the Italian name for ewes’ milk cheese - the Italian word pecora, from which the name derives, means sheep.
Our Pecorino is matured for three years during which time it ages to a deep orange colour, develops concentrated flavours and small lumps of calcium and amino acids, known as cheese nuggets, which add an extra dimension to the texture and taste.
