Feta in Brine

 

Feta is the original Greek mountain shepherd’s cheese. Originally made from either sheep or goats’ milk, this Mediterranean cheese adds a wonderful saltiness to salads, antipasto and savoury pies, such as Spanakopita, the classic Greek spinach and feta pie. 

Our feta is packed in 20% brine which preserves an age-old tradition that pre-dates refrigeration. For a less salty palate, rinse or soak in fresh water and dab dry before using.

Some feta’s are very moist and crumbly, while others, like ours, are firmer and easier to cut.

Try feta with the following foods: lamb; spinach – fresh, sautéed or in a spinach pie; tomatoes; olives; artichokes; roasted capsicum; cucumber; and watermelon.

Try feta with the following beverages: sparkling wines such as sparkling whites and Champagne; aromatic whites such as Riesling and Sauvignon Blanc; or when feta is used as an ingredient in more robust dishes, try a medium-bodied red as Pinot Noir, Grenache or Shiraz.
