Cow Pink & White Terraces (Washed Rind)

P&W Cow_Cut4aSilver_70This soft washed rind cheese is washed each alternate day with brine and wine, creating a sticky pungent pink and white rind, which after about five weeks, imparts its flavour right through the cheese. Don’t choose a subtle wine to drink with this cheese!

Washed rind cheeses have been made in Europe since the Middle Ages and are characterised by their soft supple texture, sticky orange surface and earthy pungent aroma. Washing the rind encourages the growth of the surface culture Brevibacteium Linens which gives this cheese its appearance, flavour and aroma.

Try Pink & White Terraces with the following beverages: sparkling wines such as a sparkling red; medium bodied reds such as pinot noir, shiraz, grenache; ‘Sticky’ Dessert wines such as botrytis riesling or semillon; fortified wines such as muscat, port, tokay; and beer.

Pink & White Terraces is available in both cow and sheep milk.
