This soft washed rind cheese is washed each alternate day with brine and wine, creating a sticky pungent pink and white rind, which after about five weeks, imparts its flavour right through the cheese. Don’t choose a subtle wine to drink with this cheese!
Washed rind cheeses have been made in Europe since the Middle Ages and are characterised by their soft supple texture, sticky orange surface and earthy pungent aroma. Washing the rind encourages the growth of the surface culture Brevibacteium Linens which gives this cheese its appearance, flavour and aroma.
