Halloumi (pronounced ha-loo-mee) a centuries old cheese originates from Cyprus, but is also popular in Greece and throughout the Middle East.
This salty, stretched-curd cheese has a high melting point which lends itself to pan-frying, grilling and barbecuing – when cooked a crisp crust forms on the outside with the inside softening and becoming deliciously chewy.
Halloumi is a favourite summer cheese and because of its versatility is much loved by vegetarians.
Try halloumi with the following foods: chilli; lemons; mint; parsley; olive oil; olives; pita bread; and tomatoes.
Try halloumi with the following beverages: sparkling white wines and Champagne; aromatic whites such as riesling, sauvignon blanc; and medium-bodied reds such as pinot noir, grenache and shiraz.
